What in the world is stopping me??

I feel like there is something greater out there for me. I want so badly to go back to school. I have found the course I want to take. It's exactly what I want so what is stopping me from just signing up?? Over the last few months I've realized that I want more. I want to help people reach their goals. I want to focus on nutrition and become a health and wellness consultant and weight management consultant. I already have so much knowledge in this area because of what I have accomplished why not spread it around and help other people and give them the knowledge they need to reach their goals. Most people out there have to idea what good nutrition is. We think we do but in reality. NOPE!  We all need to be educated so much in this area so we can live long, happy and healthy lives. We have so much more in us that we can do this. With that being said I guess I better overcome my fear of going back to school and possibly changing careers. I'm only scared of failure that's not so bad I guess!!

Peaches and cream overnight oats

Peaches and cream overnight oats


2 cups water
2 cups almond milk
1 cup steel cut oats
2 peaches cut up
Cinnamon 
1 tbsp honey

Combine everything in a crockpot cook in low overnight and your ready to go the next morning.  Makes enough to last awhile so just refrigerate rest. 

I use 1 yellow container for this.

Buffalo chicken

Buffalo chicken flatout pizza
This came out good. I kinda threw it together. 
  • 1 flatout
  • 1 tbsp plain Greek yogurt
  •  Redhot to your liking
  •  Chicken
  • Cheddar cheese
Mix together Greek yogurt and Redhot sauce spread in flatout bread. Place chicken on top and sprinkle with cheese. I also added alittle more Redhot because I like spicy. Broil till warm and cheese is melted.
 

Works with 21 day fix. 1 yellow 1 red  1 blue.

Recipes

                Last nights dinner was so yummy!!!  
           CHICKEN CACCIATORE 
About 7-8 boneless, skinless chicken thighs
1/2 red onion chopped up
1 green pepper
2 cans of low sodium diced tomatoes with juice
1 cup sliced mushrooms (I like mushrooms) 
1/2 can low sodium tomato sauce (not pasta) 
  First I browned the chicken  in some coconut oil. After they were browned on each side I threw everything else in the pot. I added some extra seasonings to my taste so feel free to add. Brought it up to a boil. Lowered the heat and simmered for a good hour.  I like to do it long enough where the chicken just kinda falls apart.  I served it over whole wheat pasta. On the side I made steamed some baby carrots. Once the water evaporates I put some honey on them. (Not a lot) sauté for alittle longer then done!!                
This was such a great meal and feeds a lot. Kids LOVED it and there was plenty left over.
